Dinner’s Ready: Jennifer Lambers Watson’s The Best Grilled Chicken

“My husband, Cole, and I just got married on April 5. We’re so excited for what the future holds for us both,” shared Jennifer Lambers Watson, a meteorologist for Fox 10 News. “After the wedding, life has settled down a little bit, and things are moving more slowly. I’m so thankful to just be able to sit back and relax and soak it all in. I know things will likely ramp up in my life once we get further into hurricane season, but for now, I’ll enjoy the peace.”

Jennifer goes on to share how excited her daughter, Lasyn (7), is to have a stepdad, and that time spent together as a family is one of her favorite things, too. You can often find the three of them outdoors!

“Between adventuring out on our golf cart, going out on the boat, or finding new places to explore – we love to be on the move and discovering new sights,” Jennifer said. “Our other adventure partner is our dog, Dixie, who likes to come along for the adventures with us.”

The Watsons also enjoy winding down in the evenings, eating and watching movies together. They enjoy cheering on their favorite college football teams — Mississippi State and Alabama. You can also catch them rooting on the NFL Kansas City Chiefs, as Jennifer is originally from the Kansas City area. 

“School nights typically look like sports practices and cooking. Lasyn is really involved in soccer and has found a passion for the sport,” shared Jennifer. “We’re normally pretty busy, but I’m still looking forward to finding new activities to get my daughter involved in.”

When it comes to dinner, planning and prepping are an “all in” experience for the Watsons. They try to eat at home versus eating out, despite demanding schedules, especially when major weather events are happening.

“Cole does the majority of the cooking. I do the shopping though, so I’m planning the majority of the meals,” explained Jennifer. “In the summertime, we try to prioritize grilling outside. This makes for great family time of Lasyn playing outside with the dog, and listening to music on the radio.”

One of Jennifer’s go-to meals is her Best Grilled Chicken with a customized marinade. She explained that after trying several marinade recipes, she decided to mix several together and create her own. This grilled chicken pairs well with fresh grilled corn on the cob or even on top of a fresh salad.

“I wish we could say we’re responsible and eat around the dinner table, but often times we spend our time together by watching a movie,” she shared lightheartedly.

With school starting back, Lasyn and Jennifer are looking forward to a new season for their family. In fact, their fall schedule is normally packed with travel, and this year it isn’t. They are planning to soak in the slowness of creating new memories and traditions.

“Some ways we prepare for the new school year is by making a fun day out of school supply shopping,” Jennifer shared. “It’s always a fun way to get ahead, and we try to find enjoyment out of choosing fun items. We also try to go early, so there aren’t a lot of people, and plenty of options.”

The Best Grilled Chicken

Ingredients:

  • 6 chicken breasts
  • 1/4 cup olive oil
  • 3 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • ¼ cup Dijon mustard
  • ¼ cup lemon juice
  • 1/2 cup brown sugar (can sub honey)
  • 1/2 tsp dried rosemary
  • ½ balsamic vinegar
  • 1 tsp minced garlic
  • 1 tspn Cajun seasoning
  • 1 tsp onion powder
  • 1 tsp oregano or Italian seasoning
  • Dash of salt and pepper

Directions:

  1. Mix sauces, spices, and oil together in a bowl. Add uncooked chicken.
  2. Let chicken marinate in a covered bowl, or in a ziplock bag, in the fridge for at least two hours, or up to overnight.
  3. Prepare your grill.
  4. Grill the chicken breasts for 6 to 8 minutes on each side.
  5. Make sure chicken reaches an internal temperature of 165 degrees. Let rest for 5 minutes before serving.
