“Every dinner at home starts with sitting around the table and saying our blessings,” shared Savannah Partin of Fairhope, AL. “Each person has to say one ‘thank you’ to God for something specific that happened to them or that they did that day.”
Savannah continued to share that her husband Brent is the family chef. He enjoys it and so he has always been the one to cook dinner.
“Daddy is the cook, he cooks every meal for us. If I have to cook then we usually eat out,” Savannah said light-heartedly. “In this season of life, it brings us so much joy to watch the children grow up. Time really does fly by, so watching them grow and seeing the world through their eyes is truly amazing!”
Savannah and Brent have been married for seven years. They are both natives of Mobile but have moved around quite a bit for Brent’s medical sales career. After some time in New Orleans and Montgomery, they just returned to the area six months ago and are happy to be near family once again.
The couple has three children: Michael (12), Harper (3) and Cooper (2). The kids have their own interests and activities such as video games and dance, but the family enjoys spending quality time together over anything else.
“We love to be together as a family. Our favorite things to do are go on vacations, camp, play outside, go to the beach, and cook dinners together,” said Savannah.
The family decided to share one of their favorite recipes with our Eastern Shore parents, Chicken Fried Rice. This is an easy one-pot meal, perfect for a weeknight after work.
“Brent always cooks up different meals for us,” Savannah said. “One of our favorite restaurants to visit is hibachi, so he decided to cook fried rice one day and it’s been a family fave ever since!”
Chicken Fried Rice
Ingredients:

- 2 chicken breasts (marinated in teriyaki sauce)
- 1.5 cups white jasmine rice (at least one day old or dried out in the refrigerator)
- 3 eggs
- 3 cloves garlic
- 1 onion, chopped
- 4 scallions, thinly sliced, whites and green separated
- 1 cup frozen or raw mixed vegetables
- 1/4 tsp black pepper
- 1 tsp salt
- 1 tbsp soy sauce
- 1 tsp sesame oil
Directions:
- Slice chicken breast into thin 1/2” pieces and place in a bowl. Marinate with teriyaki sauce.
- Chop your vegetables or use frozen mixed veggies.
- Beat eggs and set aside.
- Over high heat, add 2 tbsp of oil until shimmering and cook your chicken breast for 2-3 minutes until just cooked through. Remove and set aside.
- Add more oil if needed, then fry garlic, onion, and scallion whites for 1 minute, followed by your mixed veggies for another 1-2 minutes.
- Push the vegetables to the side, then add 1/2 tbsp of oil and fry your eggs until 80% cooked through. Fold the eggs into the vegetables.
- Immediately add your day-old rice, soy sauce, sesame oil, pepper, and salt to taste. Fry over high heat for 3-4 minutes or until everything is well incorporated and the rice is relatively dry.
- Add back the chicken and scallion greens and cook for another minute. Top with one fried egg, and sesame seeds, and enjoy!
