Dinner’s Ready: Joe Emer’s Slovakian Palačinkys

It is often said that happiness is food cooked by Dad. In Joe Emer’s case, happiness as a child was food prepared by his Grandpa Joe. One of his favorites was a breakfast dish. 

“My grandfather on my mom’s side, Grandpa Joe, lived near Milwaukee, WI, about two hours away from where I grew up in Appleton. When we were kids, trips to visit them always felt magical,” Joe shared. “One of the contributing magical factors was when Grandpa Joe made our favorite dish for breakfast, his Slovakian Palačinkys. My Grandma Millie would also help, but Grandpa Joe’s family has Slovakian roots.”

The Slovakian Palačinky is similar to a very thin pancake or crêpe. Traditionally, it is sweet and coated in cinnamon and sugar. This dish makes a wonderful breakfast-for-dinner option on busy weeknights because the ingredients are staples that can be found in most pantries and they do not take long to make.

“When my brother and sister were at the table, we’d eat them as fast as they could make them,” said Joe. “So now, to pass this on to my kids, our family tradition is to make them on Christmas morning.  It’s something special to help create holiday and family memories.”

Joe and his wife Katie have been married since 2011 and have two children: Eli (12) and Mia (10). Eli plays competitive travel soccer with Mobile Rush and plays the piano at Steinway Academy. Mia is on the competitive dance team at Sheffield School of Dance and also does gymnastics at Next Level Tumbling.

“Like many parents, we are always on the go. They keep us busy, and we love it,” Joe exclaimed. “There’s nothing better than watching and encouraging them to do what they love. Katie and I are extremely proud of them.”

Joe loves to cook and thankfully with his career as a host for Studio10 on Fox10, he is able to connect with many local chefs and experience plenty of delicious food that can be found along our Gulf Coast.

“Watching all these amazing chefs on Studio10 over the years has only expanded my palette and deepened my love of so many different types of food,” he said. “When my wife and I get a rare date night, we love to explore our local restaurants and especially try to support our chefs that come on Studio10.”

Slovakian Palačinkys

Ingredients:

  • 2 cups milk
  • 6 eggs, beaten
  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • pinch of salt
  • Canola or vegetable oil to coat the pan during cooking
    Topping options:
  • Sifted powdered sugar (family favorite)
  • Cinnamon & Sugar (family favorite)
  • Fruit preserves, marmalade, or jam
  • Whipped cream
  • Syrup (The kids like this, however, it’s traditionally frowned upon, like putting ketchup on steak!)

Directions:

  1. Combine flour, sugar, and salt in a
    mixing bowl.
  2. Add the whole eggs, one at a time, and beat after each egg.
  3. Add milk and vanilla extract and beat until smooth.
  4. Stir in the melted butter.

Now that you have your batter…

  1. Pour about 1/2 cup batter into a heated, lightly greased skillet.
  2. Swirl around the skillet to coat the bottom of pan.
  3. When it starts to bubble up and is slightly brown on the underside, turn and slightly brown on the other side.
  4. Lay the palacinky flat and sprinkle cinnamon and sugar (or filling of choice) on the inside and roll.
  5. Top with sifted powdered sugar (or
    topping of choice).
  6. Serve with a side of bacon or sausage!
